Where is the book Reorganize tab?

It's a big page, so follow the arrow in the screen below to the Reorganize button just below the book layout.

If you are in Preview mode, Reorganize is not visible.  (It says Overview instead.) Return to editing by tapping the Edit button in the upper right corner.
